Cream soup with tomatoes


I do not like the classic tomato soup, but the cream of tomatoes I love. Like most cream soups, the preparation of which is very simple, this one is also prepared very quickly. Its sweet and sour taste is very balanced and will taste even the most picky.

Creamy consistency, a tang of sweet cream and we have a simple and effective soup. You already know that I am a fan of soups, so on the blog you will find a lot of recipes for soups (at the bottom of the entry I will post links).

I prepared my soup on the basis of tomatoes from a can, but in the season it is worth to reach for juicy, fleshy fresh tomatoes. And why eat tomatoes? Because it is a source of lycopene, which is an antioxidant, which means that it protects our body from diseases of the circulatory system and from cancer.

The best thing is that the heat treatment makes the absorption of lycopene significantly increased. In addition, these vegetables, which are also called fruits, are low-calorie and we find in them a lot of vitamin C and beta-carotene. So, you guys gonna be tempted?

Cream of tomatoes – the necessary ingredients

To prepare the cream of tomatoes you need only a few ingredients.

  • 2 PCs cans of sliced tomatoes (in Season 7 – 8 fresh tomatoes)
    about 1 cup tomato passata
  • 4 cloves garlic
  • 1 onion
  • 2 tablespoons olive oil
  • 0.5 cups broth or water
  • 0.5 teaspoon dried basil or 5 fresh leaves
  • 1 teaspoon sugar
  • salt and pepper

Cream of tomatoes – preparation

To prepare a cream of tomatoes from a can is enough only 20 minutes. This is a very simple and quick soup to make. Peel the onion, cut into cubes, chop the garlic. Cream of tomatoes – preparation

  • In a saucepan with a thick bottom, heat the oil, add the onion and blanch it. Add garlic and fry for another 1 minute. Add the tomatoes from the tin along with the filling.
  • Season with salt and pepper, also add sugar and basil (if we use dried). Cook for about 5 minutes, remove the pan from the heat, add basil (if using fresh). Blend the whole to a smooth cream, serve with roasted pumpkin seeds or croutons. The recipe for homemade croutons can be found here .

If you use fresh tomatoes, boil them, remove the skin, cut into cubes and continue to follow the instructions above. Only increase the cooking time to 10 minutes before blanching.
