Garlic soup is a dish especially appreciated in Czech and Slovak cuisine. It is prepared on the basis of a decoction of meat or vegetables, grated garlic and potatoes. How to make garlic soup?

To prepare garlic soup for 4-6 people we need:

  • a few or a dozen cloves of garlic,
  • about two liters of vegetable broth or broth,
  • 1,5 kg of potatoes,
  • 2 onions,
  • about 200 ml of cream (can be vegetable, for example, nutty),
  • 4 tablespoons butter or olive oil,
  • salt and pepper,
  • a few tablespoons of milk (cow or vegetable) to the potatoes.

Peel the garlic and sauté or fry in clarified butter until soft. Then fry the onion and add it to the garlic and pour the broth / broth. Add diced potatoes and cook for about 30 minutes. The rest of the potatoes Boil separately, make them puree and mix with milk. We mix them with a blender, then add the cream. On a plate we put a few spoons of so prepared potatoes seasoned with salt and pepper and pour garlic soup.
